Chef’s Table at Cooma

“Chef’s Table” is the translation of the French “Table d’hôte” and this is exactly what Chef’s Table at Cooma is. There are no separate tables, only one long table in the kitchen where everybody sits together and enjoys the same menu, while they can watch Filip cook and chat with RoseAnna.

We have scaled down what a gastronomic restaurant does, but have kept the high quality of the experience. Filip does everything alone in the kitchen so there is only one set menu, a tasting menu consisting of six to eight courses highlighting Filip’s expertise in the kitchen and his deep love for Nature.

Wine and Cooking Courses

Next to Chef’s Table we also offer wine and cooking courses, all lead by Filip. He studied wine at the Wine and Spirit Education Trust and at the Institute of Masters of Wine in London and California and wine is one of his great passions. He was the founder and editor of TONG Magazine, an academic wine journal that won “Best Wine Magazine in the World” from the Gourmand World Cookbook Awards in Paris in 2011, and he was “Belgian Wine Personality of the Year” in 2010, an award he won in his native Belgian.

Filip’s cooking courses focus on the basics of gourmet cooking, like filetting fish, making exquisite sauces, refined French pastry, and in general combining ingredients into dishes that provide a concentration and explosion of flavours. Most of these basic techniques are covered in one of Filip’s best-selling books, “The Basics”, which he published in five languages. It won “Best Cookbook in the World” from the Gourmand World Cookbook Awards in France and from the World Food Media Awards in Australia. The book sold over 350,000 copies worldwide.
